THE HUMBLE YET INFAMOUS STAPLE

Over the years, the humble Cypriot potato has become a staple ingredient in Cypriot cuisine. THE RED VILLAGES

The famous Red Villages or ‘Kokkinochoria’, which lie in the east of the island, are where the Cyprus potato is grown. The area’s name is derived from the dark red soil that, along with the local climate, is ideal for growing the crop. As a result, there are a total of 14 red potato-growing villages that feature the Cyprus potato as their main crop. The village of Xylofagou, as a major potato producer, even features a potato statue in the centre of its square. This serves as a testament to the importance of the potato farming industry within the local economy.

Several factors make the Cyprus potato truly special. The local climate in this region supplies endless days of sunshine throughout the year. This, along with mild winters, also creates an ideal environment for growing the crop. The dark red soil is also rich in minerals and nutrients that contribute to the potato’s distinct texture and flavour. The versatile ‘Spunta Potato’ variety also plays a major factor. This variety is known for its creamy texture and buttery flavour that are further enhanced by the Cypriot environment. Cyprus potatoes are also usually harvested early, which tends to make them smaller and more tender than other potato varieties.

Cyprus potatoes are a must-try for anyone who loves the starchy vegetable. Bursting with flavour, they form a delicious and unique ingredient that can be prepared in several different ways. They are often used to complement several traditional Cypriot dishes extensively. In their simplest form, they are often deep-fried to perfection, creating an irresistible side dish of crispy chips. These are used to complement several Cypriot meals. Another popular method of preparation is to oven-bake them. This brings out their natural sweetness, giving them a soft, fluffy centre with a crispy exterior. 

A FEATURE FOR SOME MEALS

The Cyprus potato also features as a main ingredient in some Cypriot meals. The world-famous slow-cooked lamb-based dish of KLEFTICO, for example, uses Cyprus potatoes extensively. The potatoes are usually prepared and then slow-cooked in unison with the lamb. This allows them to absorb all of the delicate flavours that include garlic, lemon, olive oil and various herbs.
