The Cyprus Dry Orange Marble Cake is a type of sponge cake that uses fresh orange as its base. This dessert is usually enjoyed all year round on the island and it is usually served as a dessert with coffee  and comes in many variations. This version contains the basics that make up a typical marble cake, but with a unique orange twist. 

HOW TO MAKE CYPRUS DRY ORANGE MARBLE CAKE

Ingredients:

200g of unsalted butter, at room temperature
200g 0f granulated sugar
4 eggs
The zest of 1 orange
The juice of one orange
200g of all-purpose flour
1 1/2 tsps of baking powder
1/4 tsp of salt
50g of cocoa powder
2 tbsps of milk
1 tsp of vanilla extract

Instructions:

Preheat your oven to 180°C (350°F). Grease and line a loaf tin with parchment paper.

In a large mixing bowl, cream the butter and sugar together until light and fluffy.

Add the eggs one at a time, mixing well after each addition.

Slowly add the orange zest and then the orange juice mixing well.

Sift in the flour, baking powder, and salt mixing well.

Divide the batter in half and place each half into two separate bowls.

Add the cocoa powder and milk to one of the bowls and mix until well combined.

In the other bowl, add the vanilla extract and mix until well combined.

Spoon alternating dollops of the vanilla and chocolate batters into the loaf tin, creating a marble effect.

Use a spoon handle or knife to swirl the batters together creating the marble effect.

Bake in the preheated oven for 50 to 60 minutes.

Allow the cake to cool completely, then slice and serve.
