Chickpea-based hummus can be used to create a unique, deliciously warm, and comforting creamy soup that combines the nutty flavour of tahini with the earthiness of the chickpeas. This combination makes a filling and nutrient-dense hearty option during the winter months.
HOW TO MAKE HUMMUS SOUP
Ingredients:
1 cup of pre-cooked chickpeas
2 tablespoons of tahini paste
1 teaspoon of ground cumin
1 teaspoon of smoked paprika
The juice of 1 lemon
4 cups of vegetable stock
1 tablespoon of olive oil
2 cloves of finely chopped garlic
1 teaspoon of salt
1 teaspoon of pepper
I bunch of chopped fresh parsley
Instructions:
Place the chickpeas, tahini, cumin, paprika, and lemon juice along with 2 cups of vegetable stock into a blender and then blend until smooth.
If the mixture is too thick, then add more vegetable stock as required to create a good consistency.
Heat the olive oil in a large pot over a medium heat and sauté the chopped garlic for about 5 minutes.
Pour the blended mixture into the pot over the sautéed garlic and stir in the remaining vegetable stock.
Bring to a boil, then reduce the heat and allow the soup to simmer for about 10 minutes, stirring occasionally.
Season the soup with salt, pepper, and more lemon juice as required.
Drizzle each serving with a swirl of olive oil and garnish with a pinch of paprika, chopped parsley, and black wholesome olives.
