ORIGINALLY MADE BY CYPRIOT MONKS
Soumada is a traditional Cypriot drink that has a deep-rooted history. Normally taken with ice in the summer or served piping hot during the winter, it has been revered on the island for centuries. Made from fresh almonds, which are soaked in water for several days, it holds a special place in the hearts of the people of Cyprus. In ages gone by, Cypriot monks would make the drink in their monasteries. Almonds during this time were a rare prized commodity and they believed that they had special healing properties. As a result of this, the drink was often used as a traditional remedy for digestive issues.
A NON-ALCOHOLIC PRIZED BEVERAGE
The drink was so prized that it became revered by royalty. King Peter the 1st of Cyprus took a barrel of Soumada with him when he attended the Congress of Krakow in 1364. He offered it to King Casimir the 3rd of Poland as a special gift. Over time, the drink became popular as a non-alcoholic beverage amongst the general population of Cyprus. Its distinct milky-white appearance is still readily recognised and served all over the island today.
A DIFFICULT PROCESS OF CREATION
The traditional process of preparing the drink was a difficult one. It was a very labour-intensive task that required both patience and skill. Once harvested by hand, the almonds were thoroughly washed, removing the dark outer skin. This would reveal the white inner nut that would give the drink its colour. The almonds were then soaked, ground, and mixed with sugar and water. The correct proportions, to achieve the perfect balance of flavours, had to be strictly adhered to.
PASSED DOWN THROUGH GENERATIONS
This process was been passed down through the generations in Cyprus. This has helped to ensure that the drink maintains its authentic taste and quality. Today, the drink’s process of manufacture still follows these traditional methods but uses modern industrial methods.
A NON-ALCOHOLIC SWEETNESS
Once adequately softened, the outer skins of the almonds are removed. A sugar and water solution is then added to the almonds. They are then ground into a fine paste. This creates a full-bodied, non-alcoholic, sweet drink that is both refreshing and satisfying.

The drink’s unique flavour is similar to Italian Amaretto, which is also made from almonds. Soumada however is non-alcoholic and more refined than its Italian contemporary. Soumada has a richer texture and smoother taste and the almonds give the drink a fresh nutty taste. this is complemented by the sweetness from the sugar.
